Turkish cuisine is renowned for its diverse and flavorful dishes, reflecting a rich history shaped by Ottoman traditions and a unique geographical location bridging Europe and Asia. From savory kebabs to sweet pastries, the cuisine offers a wide range of tastes that cater to all palates. Here’s a brief introduction to some of the most prominent dishes.

Kebabs and Meat Dishes

Kebabs are a cornerstone of Turkish cuisine, with countless variations. Şiş kebab, a classic, consists of marinated cubes of lamb or chicken grilled on a skewer. Another popular type is Adana kebab, a spicy, hand-minced meat kebab named after the city of Adana. It’s often served with flatbread, grilled vegetables, and a side of sumac-dusted onions.

For a hearty and rich stew, İskender kebab is a must-try. Thin slices of döner meat are laid over pieces of pide (a type of flatbread), then drenched in a hot tomato sauce and melted butter. It’s traditionally topped with yogurt on the side. Köfte, or meatballs, are also a staple, and can be grilled, fried, or baked in a variety of styles.

Mezes and Appetizers

A Turkish meal often begins with a spread of mezes, or appetizers. These small dishes are meant to be shared and enjoyed with conversation. Popular mezes include haydari, a thick yogurt dip with mint and garlic; ezme, a spicy tomato and pepper paste; and patlıcan salatası, a smoky roasted eggplant salad. Another popular dish is dolma, which are vegetables like peppers or grape leaves stuffed with a mixture of rice, herbs, and sometimes minced meat.

Desserts and Sweets

Turkish desserts are often rich and syrupy. Baklava is one of the most famous, consisting of layers of phyllo dough filled with chopped nuts and sweetened with syrup. Künefe is a unique dessert made from shredded phyllo dough with a layer of cheese in the middle, soaked in a hot syrup and topped with pistachios. It’s best eaten fresh and warm. For something lighter, sütlaç is a creamy rice pudding often baked until it has a caramelized top.
